A Virtual Recipe Swap

Greetings to you today! We have finally received some snow here in Salt Lake City—and I am feeling all of the cozy winter vibes. On that note, I thought I would share a favorite granola recipe that I have made for years! It is wonderful AS IS but you can also add extra nuts and dried fruits to suit your personal preferences. If you have young children, they will love being a part of this process as the best way to mix this up is with your hands! As always, be sure to serve this granola on top of your favorite yogurt or with berries alongside your favorite type of milk! Prepare yourself—as your house is about to smell like heaven!

VANILLA GRANOLA

4 C regular oats

! C sliced almonds

1/2 C packed brown sugar

1/4 t salt

1/8 t cinnamon

Mix these ingredients together in a bowl with your hands or a large spoon.

1/3 C preferred oil (canola, light olive, or coconut all work here)

1/4 C honey

2 T white sugar

Bring the above ingredients to a boil over medium heat.

Note: When the mixture is boiling—remove from heat—add 4 teaspoons of vanilla extract (the real stuff!)

Here is the fun part. Pour the warm liquid over the dry mixture. Let it sit for a minute or two to cool down. Don’t wait too long though! Mix together with your hands, making sure all of the dry mixture is covered. Pour out the mixture onto a jelly roll pan sprayed with nonstick or I use a Silpat liner.

Bake at 300 for 25-30 minutes. Mix around once halfway through baking. Cool.
